Description
Fruit for this wine was handpicked on 10th March 2021 at Two Creeks Vineyard – Strathfieldsaye, Bendigo Victoria. This vineyard contains clay loam with Quartz and Granite dominate base soils.
Prior to fermentation, fruit was macerated and refrigerated to 6c for 5 days, (30% whole bunch) commonly known as ‘cold soak’ thus giving this wine a highly fragrant bouquet, deep purple colour and depth of flavour.
Aged in seasoned French and American Barrique for 10 months, this wine displays fragrant Aromas of ripe blackberry, dark plum and spice. On the Palate, rich plum, blueberries, pepper and spice complimented with fine grained subtle tannins.
